THE MAIDEN VOYAGE
Where it all began—Subsea’s pioneering first adventure into uncharted winemaking waters. Our inaugural immersion faced winter’s fury as cold fronts relentlessly swept Cape Leeuwin, bringing wild storms and consistent swells above 3 metres.
For months, 18+ second wave periods generated excessive ocean energy, keeping our wines in constant motion for over 80% of their underwater journey. From May’s 20°C waters through August’s 16°C winter chill, our wines experienced the full seasonal cycle beneath the Southern Ocean.
Powerful wines forged by winter storms and raw oceanic energy—proving that extraordinary things happen when tradition meets the untamed sea.

SUMMER SWELLS & HIGH ENERGY SEASONS
Subsea’s boldest adventure yet—ten months beneath the Southern Ocean’s most dynamic conditions. From November’s descent to August’s winter retrieval, our wines experienced an extraordinary year of oceanic intensity.
Summer 2025 delivered relentless energy. Water temperatures soared to 22°C before early winter’s chill brought them down to 16°c. The surf never stopped pumping, creating constant motion that kept our wines in vigorous suspension throughout the longest immersion period yet attempted.
These wines hold the memory of a mighty year beneath the waves—bold, complex expressions shaped by nature’s unrestrained energy.
OUR METHOD & PHILOSOPHY
Our pioneering Subsea winemaking technique utilises the natural sway of the Southern Ocean to stir our wines. This allows secondary fermenting with yeasts at a constant temperature in a pressured environment.
During second fermentation, we immerse our wines at a depth of 20m in the pristine marine environment off the coast of Augusta, where the Southern and Indian Oceans meet. The energy of the ocean current keeps the yeast in suspension while the underwater pressure persuades the yeasts to release new flavour notes not available on land.
But the mystery of nature doesn’t stop there. Because the ocean’s energy is random, every immersion has its own character, offering the truest expression of that season.

Our crew is made up of leading wine pioneers from both Australia and abroad who are committed to discovering new depths of premium wine. At our 413-hectare Subsea Estate off the coast of Augusta, we have access to idyllic and adventurous waters as we explore the winemaking possibilities of the pristine marine environment. This endeavour is backed by the knowledge of French Winemakers, Wine Reef, who have spent over 17 years perfecting their world-first subsea winemaking process.
By combining our experience and adventurous spirit with the beautiful unpredictability of the Southern Ocean, we’re at a new frontier, striving to deliver a fresh wine experience that stays true to a quality emblematic of Australia’s winemaking industry.
